  • 1 wheel wheel of brie cheese (8-12 ounces)
  • 1 sheet sheet of puff pastry (thawed)
  • 1/2 cup cranberry-pepper jelly Can be substituted with raspberry jam or spicy cocktail sauce.
  • 1/4 cup pecans, roughly chopped Walnuts or almonds can be used as alternatives.
  • 1 egg egg (for egg wash)
  • a pinch salt
  • optional Fresh rosemary or thyme for garnish Adds elegance and flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). This is where the magic happens!
  2. On a lightly floured surface, roll out the puff pastry sheet.
  3. Place the brie in the center of the pastry. Spoon the cranberry-pepper jelly on top of the cheese, and sprinkle your chopped pecans.
  4. Fold the pastry over the brie and seal the edges by pinching them together.
  5. Beat the egg and brush it all over the pastry.
Baking
  1. Place your wrapped brie on a parchment-lined baking sheet and bake for 25-30 minutes, or until the pastry turns golden brown and puffy.
  2. Let it cool for a few minutes before serving. Garnish with a sprig of fresh rosemary or thyme.

Notes

If your pastry is too soft, chill it for 15-20 minutes before using. Store leftovers tightly covered in the fridge, and reheat gently in the oven.
