Cheese and Toppings
  • 1 wheel wheel of Brie cheese (about 8 ounces) Traditional choice, feel free to substitute with camembert or soft goat cheese.
  • 2 tablespoons unsalted butter For caramelizing the apples.
  • 2 medium apples, peeled, cored, and sliced Honeycrisp or Granny Smith recommended for sweetness and tanginess.
  • 1/4 cup brown sugar To sweeten the caramelized apples.
  • 1/2 teaspoon cinnamon Adds warmth and flavor.
  • a sprinkle nutmeg Optional, adds a festive touch.
  • to taste fresh thyme leaves For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt the butter.
  3. Add apple slices, brown sugar, cinnamon, and nutmeg to the skillet. Stir and let cook for about 5-7 minutes until tender and caramelized.
  4. Place the Brie on a parchment-lined baking sheet. Optionally, cut a small X on top of the Brie.
  5. Pour the caramelized apples on top of the Brie and bake for 10-15 minutes, until gooey.
  6. Remove from oven, let it cool for a minute, then garnish with fresh thyme.
  7. Serve warm with crackers, bread, or fresh fruits.

Notes

You can caramelize apples ahead of time and assemble just before baking. Store any leftovers in an airtight container in the fridge for up to three days.
