Preparation
- Preheat your oven to 350°F (175°C) and grease a half-sheet pan (around 18 x 13 inches).
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add in the eggs, whole milk, vegetable oil, and vanilla extract. Mix until combined.
- Stir in the boiling water, then add the Baileys Irish Cream.
- Pour the batter into the prepared pan.
Baking
- Bake for about 30-35 minutes, or until a toothpick inserted comes out clean.
Frosting
- While the cake cools, cream the softened butter until smooth.
- Gradually add powdered sugar, cocoa powder, Baileys, and salt. Blend until you achieve a light and fluffy texture.
Serving
- Once the cake is cool, spread the frosting evenly over the top.
- Slice into squares and serve.

Short on time? You can make the cake a day in advance. Just cover it and store it in the fridge, then frost it fresh just before serving. Drizzle extra Baileys over the slices for an indulgent twist. If the frosting looks rustic, just call it 'homey' style—it's all about the taste!
