- In a mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Whip together until soft peaks form.
- In another bowl, whisk together the chocolate pudding mix and milk until the mixture thickens.
- Stir in the Baileys Irish Cream and peppermint extract into the chocolate pudding.
- Gently fold the whipped cream into the chocolate pudding mixture.
Assembly
- Layer the chocolate mint pudding mixture with whipped cream in your favorite glasses or jars.
- Top each parfait with mint leaves and a sprinkle of chocolate curls or shavings.
Notes
If you're short on time, store-bought whipped cream is fine, but homemade adds extra flavor. These parfaits can be made a day in advance and stored in the fridge.
