  • 1 pound fresh carrots about 12-15 medium-sized
  • 8 slices bacon American bacon
  • 1/4 cup maple syrup the real stuff, not imitation
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • to taste salt
  • to taste pepper
Optional Garnish
  • some chopped fresh herbs (like parsley or thyme) for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the carrots, and trim the ends. Optionally, slice them into longer sticks.
Wrapping the Carrots
  1. Take one slice of bacon and wrap it around each carrot. Use toothpicks to secure the end if necessary.
Preparing the Glaze
  1. In a small bowl, mix the maple syrup, olive oil, brown sugar, salt, and pepper.
  2. Drizzle this mixture over the wrapped carrots.
Baking
  1. Place the carrots on a baking sheet lined with parchment paper. Bake for 25-30 minutes until the bacon is crispy and the carrots are tender.
Serving
  1. Remove from the oven and let cool for a minute. Optionally, sprinkle with chopped fresh herbs before serving.

Notes

Bacon thickness can affect cooking time—adjust accordingly. Try using other vegetables like asparagus or zucchini with this technique. For a spicy kick, add cayenne pepper to the glaze.
