  • 2 lbs ground beef
  • 1 cup breadcrumbs Can be substituted with crushed saltine crackers or oat flour for gluten-free.
  • 1 cup shredded cheddar cheese Extra cheese can be used for topping.
  • 6 slices bacon, cooked and chopped Cook until crispy.
  • 1 small onion, finely diced
  • 1 clove garlic, minced
  • 2 large eggs
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the bacon until crispy, then chop it into bits.
  3. In a large bowl, combine the ground beef, breadcrumbs, cheddar cheese, chopped bacon, onion, garlic, eggs, ketchup, Worcestershire sauce, salt, and pepper. Mix gently with your hands.
  4. Shape the mixture into a loaf and place it in a baking dish. Optionally, add extra cheese on top.
Cooking
  1. Bake for about 1 hour, or until the internal temperature reaches 160°F (70°C).
  2. Let the meatloaf rest for 10 minutes before slicing.
Serving
  1. Cut into thick slices and serve with your favorite sides and extra ketchup.

This meatloaf keeps well for leftovers—enjoy it cold in sandwiches or reheated for a quick lunch.
