- Start by toasting your bread of choice until golden brown.
- In a small bowl, whisk the eggs well, adding a pinch of salt and pepper.
- Heat a non-stick skillet over medium heat and add olive oil or butter. Once hot, pour in the egg mixture and stir gently until fluffy and just set.
- Slice the avocado in half, scoop out the flesh, and mash it in a bowl. Optionally, add a sprinkle of salt and a dash of lemon juice.
- Spread the mashed avocado on the toasted bread and pile on the scrambled eggs.
Final Touches
- Add any optional toppings you desire such as cherry tomatoes, feta cheese, or red pepper flakes.
Notes
If your avocado isn’t ripe, place it in a paper bag with an apple or banana to speed up the ripening process. Store leftover eggs and avocado separately in airtight containers.
