  • 2 slices slices of bread (whole grain, sourdough, or whatever you fancy)
  • 1 ripe avocado
  • 2 large eggs
  • to taste Salt and pepper
  • as needed Olive oil or butter for cooking
Optional Toppings
  • as desired cherry tomatoes
  • as desired feta cheese
  • to taste red pepper flakes
  • as desired lemon juice

Method
 

Preparation
  1. Start by toasting your bread of choice until golden brown.
  2. In a small bowl, whisk the eggs well, adding a pinch of salt and pepper.
  3. Heat a non-stick skillet over medium heat and add olive oil or butter. Once hot, pour in the egg mixture and stir gently until fluffy and just set.
  4. Slice the avocado in half, scoop out the flesh, and mash it in a bowl. Optionally, add a sprinkle of salt and a dash of lemon juice.
  5. Spread the mashed avocado on the toasted bread and pile on the scrambled eggs.
Final Touches
  1. Add any optional toppings you desire such as cherry tomatoes, feta cheese, or red pepper flakes.

Notes

If your avocado isn’t ripe, place it in a paper bag with an apple or banana to speed up the ripening process. Store leftover eggs and avocado separately in airtight containers.
