  • 3 tablespoons crumbled feta cheese Buy a small block and crumble it yourself for fresher taste.
  • 1 tablespoon extra-virgin olive oil Plus a little more for drizzling.
  • 1 teaspoon lemon juice Fresh is best.
  • 1 pinch red pepper flakes Optional, for a little heat.
  • Freshly ground black pepper and flaky sea salt To taste.
  • 1 small garlic clove Optional, for flavor.
  • 1 handful cherry tomatoes, halved Optional garnish.
  • fresh herbs (chopped parsley or dill) Optional.

Preparation
  1. Toast the bread. Pop your slices into the toaster or oven until golden and crisp around the edges.
  2. Prep the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork, stirring in lemon juice, olive oil, and a pinch of salt and pepper.
  3. Assemble the base. Spread the mashed avocado evenly over each toasted slice.
  4. Add the feta. Sprinkle crumbled feta over the avocado.
  5. Finish the flavors. Scatter halved cherry tomatoes if using, drizzle a little olive oil, and add red pepper flakes for heat. Top with chopped herbs and a fresh grind of black pepper.
  6. Serve immediately to enjoy the best crunch.

Notes

For a protein boost, add a soft-boiled egg on top. Swap feta for goat cheese or vegan feta for a dairy-free option. Toast thicker slices for better texture and crunch.
