Ingredients
  

For the Toast
  • 2 slices slices of your favorite bread Sourdough, whole grain, or gluten-free
  • 1 ripe ripe avocado Star ingredient
  • ½ cup crumbled feta cheese Optional: can substitute with goat cheese or ricotta
  • 1 tablespoon olive oil For extra richness
  • 1 clove clove of garlic, minced Optional
  • fresh herbs Basil or parsley, to taste
  • Salt and pepper To taste

Method
 

Preparation
  1. Toast the slices of your chosen bread to your desired doneness.
  2. While the bread is toasting, cut the avocado in half and remove the pit. Scoop it into a bowl and mash it up with a fork until creamy.
  3. Mix the minced garlic, olive oil, salt, and pepper into the mashed avocado. Taste for seasoning.
Assembly
  1. Spread a generous layer of the avocado mixture onto each piece of toast.
  2. Sprinkle the crumbled feta cheese over the avocado and garnish with fresh herbs.
  3. Optionally, drizzle with olive oil for extra flavor.
Serving
  1. Slice it in half and serve immediately. Enjoy!

Notes

For an extra kick, consider adding red pepper flakes or diced tomatoes on top. If you have leftover mashed avocado, store it in an airtight container with a drizzle of lemon juice to prevent browning.
