Preparation
- Begin by toasting your favorite slices of bread until crispy.
- While the bread is toasting, slice the ripe avocado in half, remove the pit, and scoop it into a bowl. Mash it with a fork or leave it slightly chunky.
- Slice your tomato into thick pieces or halve cherry tomatoes. If using balls of mozzarella, slice those as well.
Assembly
- Spread the mashed avocado generously on each slice of toast.
- Top with layers of tomato and mozzarella slices.
- Garnish with fresh basil leaves and drizzle with olive oil and balsamic glaze.
Notes
For added heat, sprinkle some red pepper flakes. Store leftovers separately in airtight containers and toast fresh bread when ready to eat again.
