Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the pumpkin, granulated sugar, brown sugar, vegetable oil, and eggs. Mix until well blended.
- In another bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet mixture, stirring gently.
- In a separate bowl, mix together the oats, flour, brown sugar, and cinnamon. Drizzle in the melted butter and combine until it resembles coarse crumbs.
Baking
- Pour the cake batter into a greased 9x9 inch baking dish, spreading evenly.
- Scatter the crumble topping over the cake mix and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Finishing Touch
- While the cake cools, mix powdered sugar, milk, and vanilla extract in a small bowl. Drizzle it over the cooled cake.
Notes
