Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the unsweetened applesauce, sugar, vegetable oil, egg, and vanilla extract until smooth.
- In another bowl, combine the flour, baking soda, baking powder, cinnamon, and salt. Stir gently to blend.
- Gradually add the flour mixture to the wet ingredients and gently fold until just combined.
- If using, fold in chopped nuts or raisins into the batter.
- Pour the batter into a greased loaf pan and smooth the top.
Baking
- Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted comes out clean.
Cooling
- Once baked, allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Wrap the bread tightly in plastic wrap and store at room temperature for up to 3 days. It also freezes well—just slice, wrap, and freeze for quick snacks later.
