Ingredients
  

Wet ingredients
  • 1 cup applesauce homemade or store-bought
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
Dry ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Optional ingredients
  • 1/2 cup chopped walnuts or raisins for added texture

Method
 

Preparation
  1. In a large bowl, mix together the applesauce, vegetable oil, granulated sugar, and vanilla extract until well combined.
  2. Beat in the eggs until the mixture is smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually fold the dry mixture into the wet ingredients, being careful not to overmix.
  5. If desired, fold in chopped walnuts or raisins.
Baking
  1. Pour the batter into a greased 9x5-inch loaf pan and bake in a preheated oven at 350°F (175°C) for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Once baked, let the applesauce bread cool in the pan for 10 minutes before transferring to a wire rack.
  2. Slice and enjoy with friends or keep it to yourself.

Notes

For a twist, substitute applesauce with mashed bananas or other purees like pumpkin. Store leftovers wrapped at room temperature for up to three days, or freeze for up to three months.
