  • 4 cups fresh spinach, washed and dried
  • 1 large apple, sliced (recommend Honeycrisp or Fuji)
  • ½ cup crumbled feta cheese
  • ½ cup pistachios, roughly chopped You can use other nuts of your choice.
Dressing
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 lemon juiced
  • Salt and pepper to taste
Optional Add-Ons
  • Your favorite protein (e.g., chicken or chickpeas) Optional for making the salad heartier.

Method
 

Preparation of Dressing
  1. In a small bowl, whisk together honey, Dijon mustard, and lemon juice. Add a pinch of salt and pepper to taste.
Assemble Salad
  1. In a large bowl, combine the fresh spinach, apple slices, feta cheese, and chopped pistachios.
Dress the Salad
  1. Drizzle the honey-mustard lemon dressing over the salad. Toss gently, being careful not to break up the feta too much.
Taste Adjustment
