  • 1/3 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg adds moisture
  • 1/2 teaspoon vanilla extract for flavor
Apple Filling Ingredients
  • 1 medium apple, peeled, cored, and diced use a mix of sweet and tart
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice to keep apples fresh
Optional Topping
  • powdered sugar for dusting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, cream together the softened butter and egg. Add vanilla extract.
  4. Gradually mix dry ingredients into the wet until well combined.
  5. In a small bowl, toss diced apples with lemon juice and cinnamon.
  6. Fold apple mixture into the dough until evenly distributed.
Baking
  1. Drop dollops of dough onto a baking sheet lined with parchment paper, leaving space between each.
  2. Bake for 15-18 minutes, or until golden brown around the edges.
Finishing Touches
  1. Let cookies cool on the baking sheet for a few minutes, then dust with powdered sugar if desired.

Notes

For best results, use a mix of sweet and tart apples like Granny Smith and Honeycrisp. If your dough is sticky, add a bit more flour.
