Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg optional
Wet Ingredients
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 large eggs
  • 1 cup vegetable oil for moisture
  • 2 tsp vanilla extract

  • 2 cups diced apples Granny Smith or Honeycrisp recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Mix until well blended, but do not overmix.
  3. In another bowl, whisk together the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture. Stir just until combined; lumps are okay.
  5. Fold in the diced apples gently.
  6. Pour the batter into the prepared loaf pan and shake lightly to level it.
Baking
  1. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Feel free to switch up the spices; consider adding chopped walnuts or pecans for a crunch. Caramel sauce can be drizzled on top before serving.
