  • 1 cup granulated sugar
  • 0.75 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 tablespoon vanilla extract
Main Ingredients
  • 3 cups chopped apples (about 3 medium-sized apples)
  • 1 cup chopped pecans (plus more for topping)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until smooth.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
Mixing
  1. Gradually stir in the flour mixture until just combined.
  2. Gently fold in the chopped apples and pecans.
Baking
  1. Pour the batter into a greased 9×13-inch baking pan. Top with extra pecans.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack.
  2. Slice and serve with whipped cream or ice cream.

Notes

For best flavor, use a mix of sweet and tart apples like Granny Smith and Honeycrisp. You can substitute pecans with walnuts or omit them for a nut-free version. This recipe can also be made in one bowl for easier cleanup.
