  • 3-4 lbs beef chuck roast You can substitute with brisket or pork shoulder.
  • 3 cups apple cider Can substitute with chicken or beef broth mixed with a splash of apple juice.
  • 6 medium-sized potatoes, peeled and quartered Feel free to swap with other vegetables.
  • 2 cups carrots, chopped Can substitute with green beans, sweet potatoes, or parsnips.
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil For searing the roast.
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped Or 1 teaspoon dried thyme.
  • Salt and pepper to taste

Method
 

Preparation and Cooking
  1. Start by heating olive oil in a large skillet over medium-high heat. Season your beef roast with salt and pepper, then sear it on all sides until it’s beautifully browned.
  2. While your roast is getting that gorgeous color, chop your potatoes, carrots, and onion.
  3. In your slow cooker, add the potatoes, carrots, onions, and garlic. Place the seared roast on top.
  4. Pour the apple cider over the roast and sprinkle rosemary and thyme on top.
  5. Cover the slow cooker and cook on low for about 480 minutes (8 hours) or on high for 240-300 minutes (4-5 hours).
  6. Carefully remove the roast and veggies from the cooker. Let the meat rest for a few minutes before slicing it against the grain. Serve with the soft, flavorful veggies and a generous ladle of apple cider gravy.

Notes

Searing the roast adds depth to the flavor. Leftovers can make an incredible roast beef sandwich with apple cider gravy.
