Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour For the base of the cookies
  • 1 teaspoon baking powder Leavening agent for cookies
  • ½ teaspoon baking soda Helps the cookies rise
  • ½ teaspoon salt Enhances flavor
Wet Ingredients
  • 1 cup unsalted butter, softened For creaming with sugar
  • 1 ½ cups granulated sugar For sweetness
  • 1 large egg Binder for the dough
  • 1 teaspoon vanilla extract For flavor
  • ½ teaspoon almond extract Optional, for added flavor
Topping
  • as needed Extra granulated sugar For sprinkling on tops of cookies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry mixture to the wet mixture and mix until just combined.
  6. Drop heaping tablespoons of dough onto ungreased baking sheets, spacing them a couple of inches apart.
  7. Sprinkle a bit of extra sugar on top of each cookie before baking.
Baking
  1. Bake for about 10-12 minutes, or until the edges are just beginning to turn golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes for better shape retention. You can swap almond extract for lemon or orange zest for variation. Consider adding chocolate chips or sprinkles for picky eaters.
