Preparation
- Preheat your oven to 350°F (about 175°C).
- In a bowl, combine the flour, powdered sugar, almond meal, and a pinch of salt.
- In another bowl, cream the softened butter.
- Add the dry ingredients to the creamed butter, along with the almond extract. Mix until well combined.
- Dust your counter with some flour, and roll out the dough to about 1/4 inch thick.
- Use star-shaped cookie cutters to cut out your cookies.
- Arrange the cookies on a parchment-lined baking sheet and sprinkle sliced almonds on top if desired.
- Bake for about 10-12 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
If the dough feels too crumbly, add a teaspoon of cold water. You can dip half the cookie in chocolate or drizzle icing on top. Taste the dough before baking—but don't get caught!
