- In a large bowl, combine almond flour, peanut butter, honey, baking soda, salt, and vanilla extract.
- Mix until it forms a thick, sticky dough.
- Use a tablespoon or cookie scoop to roll small amounts of dough into balls and place them on a parchment-lined baking sheet.
- Gently press each cookie with a fork to create a crisscross pattern.
- Bake for 10-12 minutes or until golden brown.
- Let cool on the pan for a few minutes before transferring to wire racks.
Notes
These cookies can be stored in an airtight container for up to a week. You can also freeze rolled dough balls and bake them from frozen.
