Ingredients
  

For the Cheesecake Mixture
  • 8 ounces cream cheese, softened Make sure it's at room temperature.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip)
For the Crunch Layer
  • 1 cup graham cracker crumbs This will form the base layer.
  • 2 tablespoons unsalted butter, melted
For Assembly
  • 1 cup strawberries, diced Use additional strawberries for garnishing if desired.

Preparation
  1. In a mixing bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  2. Gently fold in the whipped topping.
Prepare the Crunch Layer
  1. In another bowl, mix graham cracker crumbs with melted butter until it feels like damp sand.
Assemble the Bites
  1. Line a mini muffin tin with cupcake liners or spray with non-stick cooking spray.
  2. Spoon a small layer of the graham cracker mixture into the bottom of each liner and tap it down gently.
  3. Add a generous dollop of cheesecake mixture on top, filling about halfway.
  4. Sprinkle diced strawberries on top of the cheesecake layer. Add another layer of the graham cracker mix to finish.
Chill and Serve
  1. Refrigerate the muffin tin for at least two hours to let the bites set.
  2. Once chilled, remove the liners and serve with extra strawberries if desired.

Notes

These bites can be made a day in advance and stored in the fridge. Substitute cream cheese with Greek yogurt for a lighter option, though it will change the flavor slightly. You can also add toffee bits or chocolate chips between layers for extra crunch.
