  • 1 cup creamy peanut butter or crunchy, if you prefer
  • 1/2 cup honey can be adjusted for sweetness preference
  • 2 cups rolled oats the base of the recipe

Preparation
  1. In a large mixing bowl, combine the peanut butter and honey. Stir until blended smoothly.
  2. Once combined, add the rolled oats. Stir until well-coated and you have a thick mixture.
  3. Using your hands, roll the mixture into small balls about the size of a walnut and place them on a baking sheet lined with parchment paper.
  4. If desired, roll them in shredded coconut or cocoa powder for added flair.
  5. Refrigerate the baking sheet for about 30 minutes to firm up the balls.
  6. Enjoy your peanut butter balls, storing any leftovers in an airtight container in the fridge for up to a week.

Notes

For nut allergies, substitute peanut butter with sunflower seed butter or almond butter. Feel free to adjust the sweetness with honey or use maple syrup/agave nectar for a vegan option.
