  • 1 14-oz can artichoke hearts, drained and quartered

  • ¼ cup red onion, thinly sliced
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, torn or chiffonade
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Optional: ½ cup crumbled feta cheese

Instructions

  1. Prepare the vegetables by quartering the artichoke hearts, halving the cherry tomatoes, and slicing the red onion thinly.
  2. Create the dressing by whisking together the olive oil, lemon juice, red wine vinegar, minced garlic, half of the fresh herbs, salt, and pepper.
  3. Combine the tomatoes, artichoke hearts, capers, and red onion in a large bowl and toss them with the dressing.
  4. Marinate (optional) by covering the salad and refrigerating for 30 minutes for flavors to meld.
  5. Serve the salad on a dish, garnish with remaining herbs and feta if using, and drizzle with olive oil.
