- 2 cups cherry tomatoes, halved (or 4 medium tomatoes, quartered)
- 1 14-oz can artichoke hearts, drained and quartered
- 3 tablespoons capers, drained
- ¼ cup red onion, thinly sliced
- ⅓ cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 2 cloves garlic, minced
- ¼ cup fresh basil, torn or chiffonade
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper to taste
- Optional: ½ cup crumbled feta cheese
Instructions
- Prepare the vegetables by quartering the artichoke hearts, halving the cherry tomatoes, and slicing the red onion thinly.
- Create the dressing by whisking together the olive oil, lemon juice, red wine vinegar, minced garlic, half of the fresh herbs, salt, and pepper.
- Combine the tomatoes, artichoke hearts, capers, and red onion in a large bowl and toss them with the dressing.
- Marinate (optional) by covering the salad and refrigerating for 30 minutes for flavors to meld.
- Serve the salad on a dish, garnish with remaining herbs and feta if using, and drizzle with olive oil.
