- 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 tablespoons fresh herbs (rosemary, thyme, sage)
- 1 tablespoon kosher salt
- 2 teaspoons freshly ground black pepper
- 1 lemon, zested and juiced
- 2 tablespoons unsalted butter
- 1 cup chicken broth
Instructions
- Pat the chicken pieces completely dry with paper towels.
- Combine olive oil, minced garlic, fresh herbs, salt, pepper, and lemon zest in a small bowl.
- Pour the marinade over the chicken and massage it into the meat.
- Let the chicken marinate at room temperature for 30 minutes or refrigerate overnight.
- Preheat your oven to 375°F (190°C) and heat an oven-safe skillet.
- Place chicken skin-side down in the hot skillet and sear undisturbed for 5-7 minutes.
- Flip the chicken skin-side up, add butter and broth, then transfer to the preheated oven.
Notes
For a lighter version, substitute chicken breasts and reduce oil. Don’t skip the marination for better flavor absorption.
