Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh herbs (rosemary, thyme, sage)
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 1 lemon, zested and juiced
  • 2 tablespoons unsalted butter
  • 1 cup chicken broth

Instructions

  1. Pat the chicken pieces completely dry with paper towels.
  2. Combine olive oil, minced garlic, fresh herbs, salt, pepper, and lemon zest in a small bowl.
  3. Pour the marinade over the chicken and massage it into the meat.
  4. Let the chicken marinate at room temperature for 30 minutes or refrigerate overnight.
  5. Preheat your oven to 375°F (190°C) and heat an oven-safe skillet.
  6. Place chicken skin-side down in the hot skillet and sear undisturbed for 5-7 minutes.
  7. Flip the chicken skin-side up, add butter and broth, then transfer to the preheated oven.

Notes

For a lighter version, substitute chicken breasts and reduce oil. Don’t skip the marination for better flavor absorption.
