- 2 (6-8 oz) filet mignon steaks
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 2 sprigs fresh rosemary
- Sea salt and freshly ground black pepper to taste
- 2 lobster tails (6–8 oz each)
- 4 tablespoons melted butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon paprika
- 1 tablespoon fresh parsley, chopped
- 1/2 cup unsalted butter, softened
- 3 cloves garlic, minced
- 1 tablespoon fresh herbs (parsley, thyme, chives)
- 1 teaspoon lemon zest
- Pinch of sea salt
Instructions
- Prepare the Steaks: Remove steaks from refrigerator 30 minutes before cooking to reach room temperature. Pat dry with paper towels, season with salt and pepper.
- Prepare the Lobster Tails: Cut through the top shell of each lobster tail and separate the meat from the shell, then mix melted butter with lemon juice and paprika.
- Make the Garlic Herb Butter: Combine all butter ingredients in a bowl, mix until well incorporated, shape into a log and refrigerate.
- Cook the Filet Mignon: Heat a cast-iron skillet, add oil, sear steaks for 3-4 minutes per side, adding butter, garlic, and rosemary to baste.
- Broil the Lobster Tails: Place lobster tails on a baking sheet and broil 4-5 inches from heat for 5-7 minutes until opaque.
Notes
For a healthier version, substitute filet mignon with bison tenderloin and use olive oil instead of butter.
