  • ¼ cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 2 tbsp fresh dill, chopped (or 2 tsp dried)
  • 1 tbsp lemon zest
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Kitchen twine or toothpicks for securing

Instructions

  1. Prepare the salmon by laying fillets on a cutting board and pounding to an even ¼-inch thickness.
  2. Create the filling by combining cream cheese, spinach, sun-dried tomatoes, garlic, dill, lemon zest, salt, and pepper in a bowl.
  3. Stuff and roll the salmon fillets tightly with the filling, securing with twine or toothpicks.
  4. Sear the rolls in an oven-safe skillet over medium-high heat for 2 minutes on each side.
