- 10 strawberry cookies, crushed
- 2 tablespoons freeze-dried strawberries, crushed
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 325°F (165°C). In a food processor, pulse strawberry cookies until they form fine crumbs. Mix with melted butter and sugar until the mixture resembles wet sand. Press firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then let cool completely.
- Beat cream cheese on medium speed until completely smooth—approximately 4 minutes. Gradually add sugar, then add eggs one at a time. Fold in sour cream, vanilla, lemon juice, and flour until just combined.
- Puree fresh strawberries until smooth. In a small saucepan, combine with sugar, cornstarch, and lemon juice. Simmer over medium heat for 5-7 minutes until thickened. Strain to remove seeds and let cool.
- Pour half the cheesecake filling over the cooled crust. Drop spoonfuls of strawberry puree on top and create swirls using a knife. Pour in the remaining filling and repeat swirling. Bake for 60-65 minutes until set but slightly jiggly in the center.
- Turn off the oven, crack the door open, and let cool for 1 hour. Once cooled, refrigerate for at least 4 hours or overnight. Combine crushed cookies and melted butter for the topping, and sprinkle around the edge of the cheesecake before serving.
Notes
Tip: Freeze the crust for 10 minutes before baking to prevent shrinkage. All ingredients should be at room temperature to ensure a smooth texture.
