  • 2 teaspoons vanilla extract
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons all-purpose flour
  • 2 cups fresh strawberries, hulled
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 10 strawberry cookies, crushed
  • 2 tablespoons freeze-dried strawberries, crushed
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 325°F (165°C). In a food processor, pulse strawberry cookies until they form fine crumbs. Mix with melted butter and sugar until the mixture resembles wet sand. Press firmly into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then let cool completely.
  2. Beat cream cheese on medium speed until completely smooth—approximately 4 minutes. Gradually add sugar, then add eggs one at a time. Fold in sour cream, vanilla, lemon juice, and flour until just combined.
  3. Puree fresh strawberries until smooth. In a small saucepan, combine with sugar, cornstarch, and lemon juice. Simmer over medium heat for 5-7 minutes until thickened. Strain to remove seeds and let cool.
  4. Pour half the cheesecake filling over the cooled crust. Drop spoonfuls of strawberry puree on top and create swirls using a knife. Pour in the remaining filling and repeat swirling. Bake for 60-65 minutes until set but slightly jiggly in the center.
  5. Turn off the oven, crack the door open, and let cool for 1 hour. Once cooled, refrigerate for at least 4 hours or overnight. Combine crushed cookies and melted butter for the topping, and sprinkle around the edge of the cheesecake before serving.

Notes

Tip: Freeze the crust for 10 minutes before baking to prevent shrinkage. All ingredients should be at room temperature to ensure a smooth texture.
