Description

A show-stopping dessert that combines the flavors of strawberry and banana in creamy layers of cheesecake, pudding, and a satisfying crunch.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 2 cups milk
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 medium ripe bananas, sliced
  • 1 cup strawberries, sliced
  • Additional whipped cream for garnish
  • ½ cup crushed vanilla wafer cookies for crunch

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar until well combined.
  2. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool completely.
  3. In a large mixing bowl, beat the softened cream cheese until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth.
  4. Gently fold in the whipped cream until everything is well blended. Pour this cheesecake filling onto the cooled crust and smooth the top. Pop it in the refrigerator to chill for about an hour.
  5. In a separate bowl, whisk together the milk and instant vanilla pudding mix until it thickens (about 2 minutes). Once thickened, spread it evenly over the chilled cheesecake layer.
  6. Layer the sliced bananas and strawberries on top of the pudding. For an added crunch, sprinkle the crushed vanilla wafer cookies over the fruit and finish with an extra dollop of whipped cream.
  7. Cover the pan and refrigerate for at least 4 hours, preferably overnight.

Notes

Feel free to substitute bananas with peaches or blueberry compote for variety. Crushed graham crackers or almonds can also provide a delightful crunch.
