These sticky beef noodles are a delicious blend of umami flavors coated in a rich, caramelized sauce that’s easy to prepare at home.

- 1 pound flank steak or sirloin, thinly sliced against the grain
- 8 ounces wide rice noodles (or substitute udon or egg noodles)
- 3 tablespoons dark soy sauce
- 2 tablespoons regular soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 scallions, separated into white and green parts
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons vegetable oil for cooking
- Optional garnishes: toasted sesame seeds, sliced red chilies, cilantro leaves
Instructions
- Prepare the beef by slicing it thinly against the grain and marinating it with soy sauce, sesame oil, and pepper.
- Mix the sauce in a separate bowl with soy sauces, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
- Cook the noodles according to the package instructions, reducing the time by 1 minute, and rinse under cold water.
- Stir-fry the beef in a hot wok with vegetable oil until browned, then remove it from the wok.
- Create the sauce by stir-frying the white parts of the scallions, adding the sauce mixture and simmering until thickened.
- Combine the cooked noodles with the sauce, add the beef back in and stir in the cornstarch slurry.
- Garnish with green scallion parts and desired toppings before serving.
Notes
Serve with a refreshing cucumber salad or steamed bok choy for a complete meal.
