Description

A rich, velvety garlic cream sauce transforms ordinary steak into a restaurant-quality dish.


Ingredients

  • 2 ribeye or New York strip steaks (1½-inch thick, approximately 12 oz each)
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 sprigs fresh thyme
  • 2 cloves garlic, crushed
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 shallot, finely diced
  • 1 cup heavy cream (substitute: half-and-half for a lighter version)
  • ¼ cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons fresh herbs (parsley, thyme, or chives), chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the steaks by bringing them to room temperature, patting them dry, and seasoning generously with salt and pepper.
  2. Sear the steaks in a hot skillet with olive oil for 4-5 minutes on each side, adding garlic and thyme in the last minutes.
  3. Rest the steaks on a warm plate covered with foil for 5-10 minutes.
  4. Prepare the garlic cream sauce by melting butter in the same skillet and sautéing garlic and shallots until fragrant.
  5. Build the sauce by deglazing the pan with beef broth, then adding Dijon mustard, Worcestershire sauce, and heavy cream.
  6. Simmer the sauce gently for 5-7 minutes until it thickens enough to coat the back of a spoon and season with salt and pepper.
  7. Finish by returning the steaks to the pan and spooning the sauce over them before serving.

Notes

For a lower-calorie option, use half-and-half or Greek yogurt thinned with milk instead of heavy cream. For dairy-free, substitute with coconut milk and olive oil.
