A rich, velvety garlic cream sauce transforms ordinary steak into a restaurant-quality dish.

- 2 ribeye or New York strip steaks (1½-inch thick, approximately 12 oz each)
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 3 sprigs fresh thyme
- 2 cloves garlic, crushed
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 shallot, finely diced
- 1 cup heavy cream (substitute: half-and-half for a lighter version)
- ¼ cup beef broth
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 2 tablespoons fresh herbs (parsley, thyme, or chives), chopped
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the steaks by bringing them to room temperature, patting them dry, and seasoning generously with salt and pepper.
- Sear the steaks in a hot skillet with olive oil for 4-5 minutes on each side, adding garlic and thyme in the last minutes.
- Rest the steaks on a warm plate covered with foil for 5-10 minutes.
- Prepare the garlic cream sauce by melting butter in the same skillet and sautéing garlic and shallots until fragrant.
- Build the sauce by deglazing the pan with beef broth, then adding Dijon mustard, Worcestershire sauce, and heavy cream.
- Simmer the sauce gently for 5-7 minutes until it thickens enough to coat the back of a spoon and season with salt and pepper.
- Finish by returning the steaks to the pan and spooning the sauce over them before serving.
Notes
For a lower-calorie option, use half-and-half or Greek yogurt thinned with milk instead of heavy cream. For dairy-free, substitute with coconut milk and olive oil.
