Description

A luxurious surf and turf dish featuring tender ribeye steak and succulent shrimp in a rich garlic butter sauce.


Ingredients

  • 2 ribeye steaks (810 oz each), room temperature
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • 12 large shrimp (1620 count), peeled and deveined
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup white wine
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the steaks by seasoning them generously with salt and pepper. Heat a cast-iron skillet over high heat, add olive oil, and sear steaks for 3-4 minutes per side. Remove and let rest.
  2. Cook the shrimp in the same skillet over medium-high heat with olive oil, seasoned with salt and pepper, for about 2 minutes per side until pink and opaque.
  3. Create the garlic butter sauce by reducing heat to medium-low, adding butter, garlic, white wine, and lemon juice. Scrape up any brown bits from the pan.
  4. Finish the sauce by allowing it to reduce, then whisk in remaining butter until emulsified. Stir in fresh herbs and season to taste.
  5. Combine the steaks and shrimp back into the skillet, spooning sauce over them. Warm through for a minute and serve immediately.

Notes

Serve with roasted asparagus, cauliflower mash, or a bright salad to balance the richness of the dish.
