  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons fresh ginger, grated
  • 3 cloves garlic, minced
  • 12 teaspoons red pepper flakes (adjust to taste)
  • 1 teaspoon honey
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Zest of one lemon
  • 1 ripe mango, diced (about 1 cup)
  • 1 cup fresh pineapple, diced
  • ¼ cup red bell pepper, finely diced
  • 3 tablespoons red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 3 tablespoons fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • Pinch of salt

Instructions

  1. Combine lemon juice, olive oil, grated ginger, minced garlic, red pepper flakes, honey, salt, pepper, and lemon zest in a medium bowl. Whisk thoroughly until well integrated.
  2. Add the peeled and deveined shrimp to the marinade, covering well. Cover and refrigerate for at least 15 minutes.
  3. While the shrimp marinate, combine the diced mango, pineapple, red bell pepper, red onion, jalapeño, and cilantro in a bowl. Add lime juice and a pinch of salt, then gently toss to combine.
  4. Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes per side until they turn pink and opaque.
  5. Transfer the cooked shrimp to a serving platter and top with the mango pineapple salsa. Garnish with cilantro leaves and lemon wedges.
