- 1 pound large shrimp (16–20 count), peeled and deveined
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons fresh ginger, grated
- 3 cloves garlic, minced
- 1–2 teaspoons red pepper flakes (adjust to taste)
- 1 teaspoon honey
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- Zest of one lemon
- 1 ripe mango, diced (about 1 cup)
- 1 cup fresh pineapple, diced
- ¼ cup red bell pepper, finely diced
- 3 tablespoons red onion, finely chopped
- 1 jalapeño, seeded and minced
- 3 tablespoons fresh cilantro, chopped
- 1 tablespoon fresh lime juice
- Pinch of salt
Instructions
- Combine lemon juice, olive oil, grated ginger, minced garlic, red pepper flakes, honey, salt, pepper, and lemon zest in a medium bowl. Whisk thoroughly until well integrated.
- Add the peeled and deveined shrimp to the marinade, covering well. Cover and refrigerate for at least 15 minutes.
- While the shrimp marinate, combine the diced mango, pineapple, red bell pepper, red onion, jalapeño, and cilantro in a bowl. Add lime juice and a pinch of salt, then gently toss to combine.
- Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes per side until they turn pink and opaque.
- Transfer the cooked shrimp to a serving platter and top with the mango pineapple salsa. Garnish with cilantro leaves and lemon wedges.
