Ingredients

- 1 pound smoked sausage (kielbasa, andouille, or Italian sausage)
- 1½ pounds baby potatoes (red, gold, or a colorful medley)
- 1 large bell pepper (any color, or a combination)
- 1 medium onion (sweet, yellow, or red)
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Heavy-duty aluminum foil (12-inch squares)
Instructions
- Prepare your ingredients by slicing sausage, quartering potatoes, dicing bell pepper, and slicing onion.
- Create your seasoning mixture by combining olive oil, minced garlic, Italian seasoning, salt, and pepper in a large bowl.
- Toss everything together until all pieces are evenly coated in the seasoning mixture.
- Assemble your foil packets by tearing off four 12-inch squares of foil and dividing the mixture among them.
- Seal the packets by folding the foil over the mixture and sealing edges with double folds, leaving space for steam to circulate.
- Cook the packets over medium heat for 25-30 minutes on the grill or bake them in a preheated 400°F oven for 35-40 minutes.
- Serve with caution by opening the packets carefully and enjoy directly in the foil.
