- 1 pound smoked sausage, sliced into ½-inch rounds
- 1½ pounds baby potatoes, quartered
- 1 medium onion, roughly chopped
- 2 bell peppers, sliced into strips
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt to taste
- Freshly ground black pepper to taste
- Heavy-duty aluminum foil (18-inch squares)
Instructions
- Preheat your grill to medium-high heat or your oven to 425°F. Tear off seven 18-inch squares of heavy-duty aluminum foil.
- Combine sliced sausage, potatoes, onions, and bell peppers in a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, oregano, salt, and pepper. Toss until evenly coated.
- Place approximately 1½ cups of the mixture in the center of each foil square. Fold foil over ingredients to form a packet, sealing the edges tightly.
- Cook packets on the grill for 20-25 minutes or in the oven for 25-30 minutes, until potatoes are tender and sausage is heated through.
- Remove packets from heat and let them rest for 5 minutes before opening cautiously to avoid steam burns.
Notes
For added flavor, sprinkle fresh herbs or serve with Greek yogurt mixed with lemon zest.
