- 1.5 pounds Italian sausage links (sweet or hot)
- 3 bell peppers (1 red, 1 yellow, 1 green) sliced into strips
- 2 large yellow onions, sliced into half-moons
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1/2 cup dry red wine
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 6 cloves garlic, peeled
- 1/2 cup whole milk
- 4 tablespoons unsalted butter
- 1/4 cup Parmesan cheese, grated (optional)
- 2 tablespoons fresh chives, chopped (for garnish)
Instructions
- Begin by pricking each sausage a few times with a fork. Heat olive oil in a large skillet over medium heat. Add the sausages and brown on all sides, about 8-10 minutes. Remove and set aside. Slice into 1-inch pieces.
- Add the remaining tablespoon of olive oil to the skillet. Add onions and a pinch of salt, cooking until softened, about 5 minutes. Add bell peppers and cook for another 5-7 minutes until softened and onions are translucent.
- Add minced garlic, rosemary, thyme, and red pepper flakes to the skillet. Sauté for 30 seconds until fragrant. Pour in the red wine, scraping up browned bits from the pan, and let reduce by half, about 3 minutes. Then add crushed tomatoes and stir to combine.
- Return the sliced sausages to the skillet, nestling them into the mixture. Reduce heat to low, cover, and simmer for 15-20 minutes, stirring occasionally. Season with salt and pepper.
- Meanwhile, place potatoes and garlic cloves in a large pot, cover with cold water and a pinch of salt. Bring to a boil, reduce to a simmer, and cook until fork-tender, about 15-20 minutes. Drain and return to the pot to evaporate excess moisture.
- Warm the milk and butter until butter melts. Add to the potatoes and mash until smooth. Fold in Parmesan cheese if using, and season with salt and pepper. Serve garlic mashed potatoes topped with the sausage, peppers, and onion mixture. Garnish with fresh chives.
Notes
This dish improves with time; refrigerate leftovers and reheat. Use healthier alternatives like turkey sausage and cauliflower mash.
