  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1 pint cherry or grape tomatoes, halved
  • 4 cloves garlic, minced (or 2 tablespoons pre-minced garlic)
  • 1/3 cup freshly grated Parmesan cheese (plus extra for serving)
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice zucchini and squash into 1/4-inch rounds.
  2. Halve the cherry tomatoes and mince the garlic.
  3. Combine the zucchini, squash, and tomatoes in a large bowl. Drizzle with olive oil and sprinkle with garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Toss until coated.
  4. Transfer the vegetables to a baking sheet lined with parchment paper. Arrange them in a single layer.
  5. Roast for 15 minutes, then sprinkle with Parmesan cheese and return to the oven for another 10 minutes until tender and golden.

Notes

For a vegan option, replace Parmesan with nutritional yeast. Ensure even cooking by slicing vegetables uniformly.
