- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 pint cherry or grape tomatoes, halved

- 1/3 cup freshly grated Parmesan cheese (plus extra for serving)
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh basil, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Slice zucchini and squash into 1/4-inch rounds.
- Halve the cherry tomatoes and mince the garlic.
- Combine the zucchini, squash, and tomatoes in a large bowl. Drizzle with olive oil and sprinkle with garlic, Italian seasoning, salt, black pepper, and red pepper flakes. Toss until coated.
- Transfer the vegetables to a baking sheet lined with parchment paper. Arrange them in a single layer.
- Roast for 15 minutes, then sprinkle with Parmesan cheese and return to the oven for another 10 minutes until tender and golden.
Notes
For a vegan option, replace Parmesan with nutritional yeast. Ensure even cooking by slicing vegetables uniformly.
