  • 1 pound mixed mushrooms (cremini, shiitake, oyster), sliced
  • 3 cloves garlic, minced
  • 1 small shallot, finely diced
  • 1 tablespoon butter
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the pork tenderloin by seasoning it generously with salt, pepper, garlic powder, and thyme. Let it rest for 15 minutes.
  2. Sear the tenderloin in a skillet with olive oil over medium-high heat until golden brown, about 2-3 minutes per side.
  3. Cook the mixed mushrooms in the same skillet, followed by adding shallots and garlic until fragrant.
  4. Create the cream sauce by adding chicken broth, simmering until reduced, followed by heavy cream and Dijon mustard until thickened.
  5. Return the seared pork to the mushroom cream sauce, cooking until the internal temperature reaches 145°F (63°C). Let rest before slicing.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut cream. Ensure to allow mushrooms to caramelize for enhanced flavor.
