- 1 pound mixed mushrooms (cremini, shiitake, oyster), sliced
- 3 cloves garlic, minced
- 1 small shallot, finely diced
- 1 tablespoon butter
- ¾ cup chicken broth
- 1 cup heavy cream
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh parsley, chopped
Instructions
- Prepare the pork tenderloin by seasoning it generously with salt, pepper, garlic powder, and thyme. Let it rest for 15 minutes.
- Sear the tenderloin in a skillet with olive oil over medium-high heat until golden brown, about 2-3 minutes per side.
- Cook the mixed mushrooms in the same skillet, followed by adding shallots and garlic until fragrant.
- Create the cream sauce by adding chicken broth, simmering until reduced, followed by heavy cream and Dijon mustard until thickened.
- Return the seared pork to the mushroom cream sauce, cooking until the internal temperature reaches 145°F (63°C). Let rest before slicing.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Ensure to allow mushrooms to caramelize for enhanced flavor.
