This Pistachio Lemon Breakfast Bread combines tangy lemon with rich pistachios for a delicious and nutritious morning treat.

- 2 cups all-purpose flour (or 1:1 gluten-free flour blend)
- 1 cup shelled pistachios, roughly chopped
- 3/4 cup granulated sugar (or coconut sugar)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of 2 lemons (about 2 tablespoons)
- 1/4 cup fresh lemon juice
- 1/2 cup plain Greek yogurt
- 1/3 cup extra virgin olive oil (or melted coconut oil)
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons fresh lemon juice (for glaze)
- 1 teaspoon lemon zest (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.
- Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
- Pulse 3/4 cup of the pistachios in a food processor until finely ground. Reserve 1/4 cup for texture.
- In another bowl, whisk the eggs, sugar, yogurt, olive oil, lemon juice, lemon zest, vanilla, and almond extract until smooth.
- Fold the wet ingredients into the dry ingredients until just combined. Gently incorporate both ground and chopped pistachios.
- Pour the batter into the prepared loaf pan and sprinkle with additional chopped pistachios. Bake for 50-55 minutes.
- Cool the bread in the pan for 10 minutes, then drizzle the glaze over the top and let it set before slicing.
Notes
For a healthier version, consider using whole wheat flour and reducing the sugar. Can be made dairy-free by substituting yogurt with coconut yogurt.
