Ingredients

  • 1 cup shelled pistachios, roughly chopped
  • 3/4 cup granulated sugar (or coconut sugar)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 2 lemons (about 2 tablespoons)
  • 1/4 cup fresh lemon juice
  • 1/2 cup plain Greek yogurt
  • 1/3 cup extra virgin olive oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.
  2. Whisk together the flour, baking powder, baking soda, and salt in a large bowl.
  3. Pulse 3/4 cup of the pistachios in a food processor until finely ground. Reserve 1/4 cup for texture.
  4. In another bowl, whisk the eggs, sugar, yogurt, olive oil, lemon juice, lemon zest, vanilla, and almond extract until smooth.
  5. Fold the wet ingredients into the dry ingredients until just combined. Gently incorporate both ground and chopped pistachios.
  6. Pour the batter into the prepared loaf pan and sprinkle with additional chopped pistachios. Bake for 50-55 minutes.
  7. Cool the bread in the pan for 10 minutes, then drizzle the glaze over the top and let it set before slicing.

Notes

For a healthier version, consider using whole wheat flour and reducing the sugar. Can be made dairy-free by substituting yogurt with coconut yogurt.
