  • 1½ cups graham cracker crumbs (about 10 full sheets)
  • ⅓ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 1 can (20 oz) crushed pineapple, well-drained
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract
  • Fresh pineapple chunks for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into a 9-inch pie dish. Bake for 8 minutes until lightly golden, then cool completely.
  2. In a large bowl, beat softened cream cheese until smooth – about 2 minutes. Add sugar and vanilla, beating until well incorporated.
  3. Add eggs one at a time, beating on low speed after each addition. Fold in the well-drained crushed pineapple, sprinkle flour and salt, and fold gently until incorporated.
  4. Pour the filling into the cooled crust and smooth the top. Bake at 350°F for 40-45 minutes until the center is almost set. Allow to cool gradually in the oven for 1 hour.
  5. Refrigerate the pie for at least 3 hours. Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over the pie and garnish with fresh pineapple chunks.

Notes

For a lighter version, substitute Neufchâtel cheese for cream cheese. Ensure pineapple is well-drained to prevent a soggy pie.
