Description

Delicious and indulgent sandwich cookies combining chocolate, marshmallow, and peanut butter for a nostalgic treat.


Ingredients

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup marshmallow fluff
  • 6 ounces high-quality milk chocolate, chopped
  • 2 tablespoons graham cracker crumbs

Instructions

  1. Beat the peanut butter, butter, brown sugar, and granulated sugar together until light and fluffy.
  2. Add the egg and vanilla extract, mixing until fully incorporated.
  3. Whisk the flour, baking soda, baking powder, and salt together, then gradually add to the wet ingredients.
  4. Roll the dough into 1-inch balls and place them on baking sheets.
  5. Create a crisscross pattern on top of each cookie with a fork.
  6. Chill the formed dough for 15 minutes in the refrigerator.
  7. Bake in a preheated 350°F oven for 10-12 minutes.
  8. Prepare the filling by melting the chocolate and toasting the marshmallows if using.
  9. Flip half the cookies over and spread melted chocolate on the flat side.
  10. Sprinkle with graham cracker crumbs, then add a layer of marshmallow fluff.
  11. Top with another cookie, pressing gently to create a sandwich.
  12. Allow to set for 10 minutes before serving.

Notes

These cookies can be made healthier by using whole wheat flour, reducing sugar, and using natural peanut butter.
