- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
- ¾ cup warm water (110-115°F)
- ½ pound ground beef (90% lean)
- 4 slices bacon, cooked crispy and crumbled
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ¼ cup pizza sauce
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- ½ small onion, finely diced
- 1 dill pickle, finely chopped
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 1 egg (for egg wash)
- 1 tablespoon sesame seeds
- 2 tablespoons melted butter
- ½ teaspoon garlic powder
Instructions
- Prepare the Dough: In a large bowl, combine the warm water, sugar, and yeast. Let it sit for 5-7 minutes until foamy and activated. Add the olive oil, salt, and gradually mix in the flour until a soft dough forms. Knead on a floured surface for 5 minutes until smooth and elastic. Place in an oiled bowl, cover with a damp cloth, and let rest for 15 minutes.
- Cook the Filling: In a skillet over medium heat, brown the ground beef, breaking it into small crumbles as it cooks. When nearly done, add the diced onion and cook until translucent. Drain excess fat, then stir in the Worcestershire sauce, ketchup, mustard, and a pinch of salt and pepper. Remove from heat and let cool slightly.
- Assemble the Pockets: Preheat your oven to 400°F and line a baking sheet with parchment paper. Divide the dough into 5 equal portions. Roll each portion into a 6-inch circle. On one half of each circle, spread 1-2 teaspoons of pizza sauce, then layer with the beef mixture, crumbled bacon, chopped pickles, and both cheeses, leaving a ½-inch border.
- Seal and Shape: Fold the empty half of each dough circle over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork or fold over for a decorative edge. Transfer to the prepared baking sheet. Whisk the egg with 1 tablespoon of water and brush over each pocket. Sprinkle with sesame seeds and cut a small vent in the top of each pocket.
- Bake to Perfection: Bake for 18-20 minutes until golden brown and cooked through. While still hot, combine the melted butter with garlic powder and brush over the tops. Allow to cool for 5 minutes before serving.
Notes
Serve with warm pizza sauce or burger sauce for dipping. Perfect for make-ahead lunches or a pocket bar with various dipping sauces.
