- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 medium onion, finely diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 8 ounces fettuccine pasta
- 2.5 cups chicken broth
- 1 cup heavy cream
- 1.5 cups freshly grated Parmesan cheese
- ¼ teaspoon crushed red pepper flakes
- ½ teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with half the Cajun seasoning, then sear until golden brown, about 4-5 minutes. Remove chicken and set aside.
- Reduce heat to medium, add butter, and sauté onions for 2 minutes. Add garlic and bell peppers, cooking for another 3-4 minutes.
- Add uncooked fettuccine, chicken broth, remaining Cajun seasoning, dried oregano, and red pepper flakes. Bring to a boil, then reduce to a simmer and cook for 10-12 minutes.
- Stir in heavy cream and return chicken to pot. Cook for 2-3 minutes, then gradually add Parmesan cheese while stirring.
- Remove from heat, let rest for 3-5 minutes, and garnish with parsley before serving.
Notes
For a lighter version, substitute half-and-half for heavy cream and use whole wheat pasta for additional fiber. Adjust Cajun seasoning to taste for a milder dish.
