- For the Snickerdoodle Topping:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup milk
- For the Cinnamon-Sugar Coating:
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or a 10-inch cast-iron skillet.
- Combine sliced peaches with sugar, cornstarch, vanilla, cinnamon, salt, and lemon juice in a large bowl. Toss gently.
- In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, cream butter and sugar until fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients to the butter mixture, alternating with milk.
- Transfer the fruit mixture to the prepared baking dish and drop spoonfuls of the snickerdoodle topping over it.
- Mix together sugar, cinnamon, and nutmeg in a small bowl and sprinkle over the topping.
- Bake for 45-50 minutes, until the topping is golden brown and filling is bubbly.
- Cool for at least 15 minutes before serving.
Notes
For a gluten-free version, use a gluten-free flour blend. Serve warm with ice cream or yogurt for a delightful treat.
