  • For the Snickerdoodle Topping:
  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For the Cinnamon-Sugar Coating:
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or a 10-inch cast-iron skillet.
  2. Combine sliced peaches with sugar, cornstarch, vanilla, cinnamon, salt, and lemon juice in a large bowl. Toss gently.
  3. In a medium bowl, whisk together flour, baking powder, and salt. In a separate bowl, cream butter and sugar until fluffy. Beat in egg and vanilla.
  4. Gradually add dry ingredients to the butter mixture, alternating with milk.
  5. Transfer the fruit mixture to the prepared baking dish and drop spoonfuls of the snickerdoodle topping over it.
  6. Mix together sugar, cinnamon, and nutmeg in a small bowl and sprinkle over the topping.
  7. Bake for 45-50 minutes, until the topping is golden brown and filling is bubbly.
  8. Cool for at least 15 minutes before serving.

Notes

For a gluten-free version, use a gluten-free flour blend. Serve warm with ice cream or yogurt for a delightful treat.
