- 2 tablespoons olive oil (or avocado oil)
- 1 teaspoon sea salt
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- ½ cup sour cream (or Greek yogurt)
- 4 strips bacon, cooked and crumbled (or turkey bacon/coconut bacon)
- ¼ cup shredded cheddar cheese (or plant-based cheese)
- 2 tablespoons chopped chives or green onions
- 1 tablespoon jalapeños, finely diced (optional)
Instructions
- Preheat your oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly. Slice them into ½-inch rounds.
- Toss the sweet potato rounds with olive oil, salt, garlic powder, and smoked paprika until evenly coated. Arrange them in a single layer on a parchment-lined baking sheet.
- Bake for 15 minutes, then flip each round and continue baking for another 10 minutes until slightly crispy.
- Remove from the oven, sprinkle cheese over each round, and return to the oven for 2-3 minutes until melted. Top with sour cream, bacon bits, chives, and jalapeños if using.
