  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ½ cup sour cream (or Greek yogurt)
  • 4 strips bacon, cooked and crumbled (or turkey bacon/coconut bacon)
  • ¼ cup shredded cheddar cheese (or plant-based cheese)
  • 2 tablespoons chopped chives or green onions
  • 1 tablespoon jalapeños, finely diced (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and scrub the sweet potatoes thoroughly. Slice them into ½-inch rounds.
  2. Toss the sweet potato rounds with olive oil, salt, garlic powder, and smoked paprika until evenly coated. Arrange them in a single layer on a parchment-lined baking sheet.
  3. Bake for 15 minutes, then flip each round and continue baking for another 10 minutes until slightly crispy.
  4. Remove from the oven, sprinkle cheese over each round, and return to the oven for 2-3 minutes until melted. Top with sour cream, bacon bits, chives, and jalapeños if using.
