A quick and delicious 5-star recipe combining zesty lemon, aromatic garlic, and tender chicken on a bed of creamy Parmesan linguine, perfect for weeknight dinners.

- 1.5 lbs boneless, skinless chicken breasts, sliced into cutlets
- 3 tablespoons unsalted butter (or ghee)
- 4 garlic cloves, minced (or 1 tablespoon garlic paste)
- Juice and zest of 1 large lemon (approximately 3 tablespoons juice)
- 1/2 cup low sodium chicken broth
- 1 teaspoon Italian herbs
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 8 oz linguine pasta (or fettuccine or spaghetti)
- 3/4 cup freshly grated Parmesan cheese (or Pecorino Romano)
- 2 tablespoons butter
- 1/4 cup reserved pasta water
- 1/4 teaspoon ground black pepper
Instructions
- Season chicken cutlets with salt and pepper on both sides. Allow to come to room temperature for 10 minutes.
- Bring a large pot of heavily salted water to a rolling boil. Add linguine and cook until al dente, about 7-9 minutes.
- Melt 2 tablespoons butter in a large skillet over medium-high heat. Add chicken cutlets and cook for 3-4 minutes per side until golden.
- In the same skillet, add remaining 1 tablespoon butter and minced garlic. Sauté for 30 seconds until fragrant, then pour in chicken broth, lemon juice, and zest.
- Return chicken to the skillet, coating in sauce. Simmer for 1-2 minutes.
- Drain pasta, reserving 1/4 cup of pasta water. Add pasta back to pot with 2 tablespoons butter and Parmesan, tossing continuously.
- Serve by arranging linguine on plates, topping with chicken and sauce, and garnishing with parsley and lemon zest.
Notes
For a lighter version, use whole wheat linguine and replace some butter with olive oil. Great with sides like arugula salad or garlic roasted broccolini.
