- 1 packet (2¼ teaspoons) active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
- ¾ cup warm water
- ¼ pound thinly sliced pepperoni
- ¼ pound thinly sliced ham
- ¼ pound thinly sliced salami
- 8 ounces shredded mozzarella cheese
- 4 ounces provolone cheese, sliced
- 1 tablespoon Italian seasoning
- 1 teaspoon crushed red pepper flakes (optional)
- 1 egg, beaten (for egg wash)
- 1 tablespoon sesame seeds (optional topping)
Instructions
- Combine warm water, sugar, and yeast in a large bowl. Let sit for 5-10 minutes until foamy.
- Add olive oil, salt, and gradually mix in flour until a soft dough forms. Knead on a floured surface for 5-7 minutes until elastic and smooth.
- Place in an oiled bowl, cover with plastic wrap, and let rise in a warm spot until doubled in size.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and transfer to your floured surface. Roll into a 14×10-inch rectangle approximately ¼-inch thick.
- Layer ingredients in this order: provolone cheese, ham, salami, pepperoni, mozzarella cheese, and sprinkle with Italian seasoning and red pepper flakes if using.
- Starting from the long edge, carefully roll the dough like a jelly roll and place seam-side down on your prepared baking sheet.
- Brush the surface with beaten egg wash, cut 4-5 small slits on top, and sprinkle with sesame seeds if desired.
- Bake for 25-30 minutes until deeply golden brown, allowing to cool for 10 minutes before slicing.
Notes
For the best texture, keep your dough slightly tacky. Use whole wheat flour for added fiber, or turkey pepperoni for lower fat content.
