- 1 cup unsalted butter (softened, for frosting)
- 4 cups powdered sugar
- 1/2 cup blackberry puree (for frosting)
- 4 oz dark chocolate (melted, for frosting)
Instructions
- Bake the dark chocolate cake layers by mixing dry ingredients and wet separately, then combining, and pouring into a prepared pan. Bake at 350°F until a toothpick comes out with fudgy crumbs.
- Make the blackberry and chocolate buttercream by pureeing blackberries, beating butter, and alternating powdered sugar and blackberry puree, then adding melted chocolate.
- Stack and fill the cake layers with buttercream and fresh blackberries, frost the outside, and decorate as desired.
Notes
Use fresh blackberries for the best flavor and ensure cakes are completely cool before frosting to prevent melting. This cake also works well as cupcakes.
