- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 quart (4 cups) of your favorite ice cream, slightly softened
- Optional mix-ins: ½ cup chocolate chips, crushed nuts, or sprinkles
Instructions
- Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, beating until well incorporated. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in your choice of mix-ins.
- Line a 15×10-inch jelly roll pan with parchment paper, leaving an overhang on all sides. Press the cookie dough evenly into the pan, creating a rectangle approximately ¼-inch thick. Bake at 350°F (175°C) for 10-12 minutes until the edges are golden but the center remains slightly soft. Allow to cool completely.
- While the cookie base cools, remove your ice cream from the freezer and allow it to soften slightly for 10-15 minutes.
- Once the cookie base has cooled completely, spread the softened ice cream evenly over the surface, leaving a ½-inch border around the edges. Begin rolling the cookie from the short end, creating a tight cylinder.
- Immediately wrap the roll tightly in the parchment paper, then wrap again with aluminum foil to prevent freezer burn. Freeze for at least 4 hours or overnight for best results.
- When ready to serve, remove the roll from the freezer and let it stand for 5-10 minutes to soften slightly. Unwrap and slice into 1-inch thick rounds.
- Elevate your ice cream cookie roll by adding a drizzle of chocolate sauce, a sprinkle of sea salt, or a dollop of whipped cream just before serving.
Notes
To reduce caloric content, substitute regular ice cream with Greek yogurt frozen dessert or use whole wheat pastry flour.
