  • ¾ cup granulated sugar (or coconut sugar for a less refined option)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 quart (4 cups) of your favorite ice cream, slightly softened
  • Optional mix-ins: ½ cup chocolate chips, crushed nuts, or sprinkles

Instructions

  1. Cream together the softened butter and sugar until light and fluffy, about 3-4 minutes. Add the egg and vanilla extract, beating until well incorporated. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in your choice of mix-ins.
  2. Line a 15×10-inch jelly roll pan with parchment paper, leaving an overhang on all sides. Press the cookie dough evenly into the pan, creating a rectangle approximately ¼-inch thick. Bake at 350°F (175°C) for 10-12 minutes until the edges are golden but the center remains slightly soft. Allow to cool completely.
  3. While the cookie base cools, remove your ice cream from the freezer and allow it to soften slightly for 10-15 minutes.
  4. Once the cookie base has cooled completely, spread the softened ice cream evenly over the surface, leaving a ½-inch border around the edges. Begin rolling the cookie from the short end, creating a tight cylinder.
  5. Immediately wrap the roll tightly in the parchment paper, then wrap again with aluminum foil to prevent freezer burn. Freeze for at least 4 hours or overnight for best results.
  6. When ready to serve, remove the roll from the freezer and let it stand for 5-10 minutes to soften slightly. Unwrap and slice into 1-inch thick rounds.
  7. Elevate your ice cream cookie roll by adding a drizzle of chocolate sauce, a sprinkle of sea salt, or a dollop of whipped cream just before serving.

Notes

To reduce caloric content, substitute regular ice cream with Greek yogurt frozen dessert or use whole wheat pastry flour.
