  • 2 ½ cups all-purpose flour

  • 1 tablespoon baking powder
  • 1 teaspoon baking soda

  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon coconut extract
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and chopped
  • ½ cup granulated sugar (for filling)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 cup unsalted butter (for frosting, softened)
  • 4 cups powdered sugar
  • 1 teaspoon coconut extract (for frosting)
  • 24 tablespoons heavy cream (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Cream the butter until creamy, gradually add sugar and eggs. Mix in coconut and vanilla extract.
  4. Combine the dry mixture and buttermilk in three additions until smooth, then fold in the shredded coconut.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the centers comes out clean.
  6. Prepare the strawberry filling by combining strawberries, sugar, cornstarch, and lemon juice in a saucepan, and cook until thickened.
  7. Make the frosting by beating butter, adding powdered sugar and coconut extract, and adjusting with heavy cream for desired consistency.
  8. Assemble the cake by layering with strawberry filling and frosting the top and sides with coconut frosting.

Notes

For a buttermilk substitute, mix milk with vinegar or lemon juice. Store leftovers in an airtight container for up to three days.
