- 1 cup unsweetened shredded coconut
- 2 ½ cups all-purpose flour
- 2 cups granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup buttermilk
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and chopped
- ½ cup granulated sugar (for filling)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 cup unsalted butter (for frosting, softened)
- 4 cups powdered sugar
- 1 teaspoon coconut extract (for frosting)
- 2–4 tablespoons heavy cream (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Cream the butter until creamy, gradually add sugar and eggs. Mix in coconut and vanilla extract.
- Combine the dry mixture and buttermilk in three additions until smooth, then fold in the shredded coconut.
- Bake for 25-30 minutes, or until a toothpick inserted in the centers comes out clean.
- Prepare the strawberry filling by combining strawberries, sugar, cornstarch, and lemon juice in a saucepan, and cook until thickened.
- Make the frosting by beating butter, adding powdered sugar and coconut extract, and adjusting with heavy cream for desired consistency.
- Assemble the cake by layering with strawberry filling and frosting the top and sides with coconut frosting.

Notes
For a buttermilk substitute, mix milk with vinegar or lemon juice. Store leftovers in an airtight container for up to three days.
